To be fair, driving a bus or train requires considerably greater skill than driving a motor car. Hence drivers of such vehicles are required to pass examinations on a regular basis just to keep their licences.
There's still cash work in Dublin. My Free Now takings for the year to date is 49% cash, 51% account. Very little cash on Bolt, by comparison, though at just 6% cash since I joined on 26 Jan. If it's less traceable cash you're after the streets seem extremely busy after midnight - on Sunday mornings at least. My experience of the same would be mainly in Swords and Drogheda but I'd imagine the city would be at least as busy as would any large town with (official) late bars targeting the younger (at heart) clientele.
